Every year, food borne illness causes an estimated 76 million
Americans to become ill, 325,000 to be hospitalized, and 5,000
to die, according to the Centers for Disease Control. Many of
these individuals are members of low-income, low-literacy populations
who are especially vulnerable to such illness because they are
children and elderly living in poverty. Part of the solution,
says Associate Professor Lydia Medeiros, lies in ensuring that
community nutrition education programs teach the necessary basics
of food safety during home preparation. For this reason, she has
begun a project to create a much needed evaluation instrument
that will be used by such programs as the Food Stamp Nutrition
Education Program and WIC. "Our ultimate goal is to improve food
safety education evaluation," says Medeiros, "so we can more universally
measure program outcomes as they affect the health of participants.
In other words, we want to see fewer health problems caused by
food-handling errors."
