Page 1 Page 2 Page 3 Page 4 Page 5 Page 6 Page 7 Page 8 Page 9 Page 10 Page 11 Page 12 Page 13 Page 14 Page 15 Page 16 Page 17 Page 1810 Bangkok Buckeyes submitted by Jeni Britton Bauer Ingredients 3/4 C peanut butter, creamy 7 Tbs unsalted butter, room temp 3/4 tsp salt 1 1/2 Tbs honey 2 C powdered sugar 1/2 tsp cayenne 1 C shredded coconut, toasted 1 1/2 C 68% chocolate Directions 1. Combine nut butter, butter, salt, vanilla, cayenne, and honey in the bowl of a stand mixer. 2. Cream on medium speed until completely incorporated and slightly fluffy, scraping the bowl with a spatula as needed. 3. Add in the powdered sugar and blend on the lowest speed until completely incorporated and the mixture is just beginning to crumble. 4. Using a small cookie scoop, portion the buckeye mixture onto a sheet pan lined with parchment paper. Let sit in the freezer 10 - 15 minutes to harden. 5. Meanwhile, place chocolate in a microwave safe bowl and heat in 30 second increments, stirring after each round, until the chocolate is completely melted without lumps. Set aside to cool slightly. 6. Remove the portioned buckeyes from the freezer and give them a quick roll to smooth out the surface of the candy. 7. Insert a toothpick into the center of a buckeye, dip into the melted chocolate and swirl in a circular motion until most all of the buckeye is covered leaving a small round of the candy visible. 8. Place toasted coconut on second sheet pan in an even layer. After dipping the buckeyes in chocolate, place on the coconut. Refrigerate and serve. Notes: To toast coconut: Preheat oven to 325º F. Place coconut on a sheet pan and toast for 10 - 15 minutes, stirring halfway through, until golden brown. Jeni’s Splendid The idea for this take on a traditional — albeit exceptional — buckeye candy came from two important Columbus institutions: The North Market, our 150-year-old public market downtown, and The Ohio State University, our intrepid center-city institution full of incredible thinking and innovation in art, business, medicine, science and, yes, football. We made these buckeyes for fun to mimic one of our most popular peanut butter-based ice creams. And now it has become a staple for us (especially during the holidays), and a celebration of our city’s great culture. It’s coconut, peanut butter and a tiny kick from cayenne that is as addictive as your favorite candy bar.
