Page 1 Page 2 Page 3 Page 4 Page 5 Page 6 Page 7 Page 8 Page 9 Page 10 Page 11 Page 12 Page 13 Page 14 Page 15 Page 16 Page 17 Page 186 Pumpkin Pie Cheesecake submitted by Cortney and Bobby Carpenter Ingredients 16 oz cream cheese, softened 1/2 C sugar 1/2 tsp vanilla extract 2 eggs 1/2 C pumpkin puree 9-inch graham cracker crust Topping caramel sauce and whipped cream Directions Preheat oven to 325º F. Using a mixer, combine cream cheese, sugar and vanilla extract. Beat in eggs one at a time. Scoop one cup of mixture and place in prepared graham cracker crust. Spread evenly. Add pumpkin puree to remainder of the batter in bowl and incorporate thoroughly. Carefully spread over the batter in the crust to create 2 layers. Bake for 45 minutes. Allow to cool and then refrigerate over night. Top with caramel sauce and whipped cream to serve.
