Page 1 Page 2 Page 3 Page 4 Page 5 Page 6 Page 7 Page 8 Page 9 Page 10 Page 11 Page 12 Page 13 Page 14 Page 15 Page 16 Page 17 Page 183 Red Velvet Cake submitted by Barbara and Jack Nicklaus Ingredients 2 1/2 C all-purpose flour 1 Tbs baking soda 1 Tbs cocoa powder 1 1/2 C sugar 2 eggs 1 1/2 C vegetable oil 1 Tbs vanilla extract 1 Tbs white vinegar 4 Tbs red food coloring 1 C buttermilk 1/2 C butter, softened 8 oz cream cheese, softened 1 tsp vanilla extract 16 oz powdered sugar Directions Prepare the cake: Preheat oven to 350º F. Grease and flour three 8-inch round cake pans. Sift together flour, baking soda and cocoa powder in a bowl. In a separate bowl, combine sugar, eggs, oil, vanilla, vinegar and food coloring. Add flour mixture and buttermilk alternately to sugar mixture. Divide batter into cake pans. Bake for 15 to 20 minutes. Make the frosting: Beat the butter, cream cheese, vanilla and powdered sugar until smooth. Spread frosting between cake layers and on top and sides of cooled cake. Funny Story “I was trying to make the evening special for our youngest son’s future in-laws. So I made a birthday cake for his future father-in-law and hid it in the oven. I forgot it, however, and when I turned on the oven later in the day to cook the Veal Parmesan, the frosting had melted and run down the cake before I rescued it. We ate it anyway and laughed at the story, which broke the ice and is still a great conversation piece with our son’s in-laws.” -Barbara Nicklaus
