Page 1 Page 2 Page 3 Page 4 Page 5 Page 6 Page 7 Page 8 Page 9 Page 10 Page 11 Page 12 Page 13 Page 14 Page 15 Page 16 Page 17 Page 1813 Oatmeal Cookies submitted by Lauren Blake Ingredients 2 bananas, ripe 1/2 C natural creamy peanut butter 1 Tbs ground flaxseed 3 Tbs water 1 Tbs coconut oil, melted 1 tsp pure vanilla extract 2 Tbs pure maple syrup 2 1/2 C rolled oats 1/2 tsp baking powder 1 tsp cinnamon pinch salt 3/4 C vegan or regular chocolate chips Directions Preheat the oven to 350 degrees (F) . In a small bowl, combine flaxseed and water to create a flax egg, and let sit for 5 minutes. Set aside. In a large bowl, mash the bananas, then add peanut butter, coconut oil, vanilla extract, maple syrup, baking powder, and cinnamon. Add flax egg when ready and mix everything until combined. Add oats and mix well. Fold in chocolate chips and stir until well combined. Drop spoonfuls of dough onto prepared baking sheet. Bake for 14 minutes or until cookies are set. Let cool on baking sheet for 2-3 minutes then transfer to a wire cooling rack and let cool completely.
